Life is busy and getting time to test old recipes from this family collection can be a challenge. This week I looked for one which would fit in with the meals we would be planning for a busy work week - soups, salads, sandwiches, dinners prepped the night before (and if I’m organised batched!). This recipe for a salad dressing that will keep seemed like just the ticket.
I tend to keep salad dressings pretty simple, trusting in good quality oils and. Like most things once you have a solid foundation you have a pretty strong head start.
This one intrigued me though because it involves a saucepan which I rarely use for dressings and milk which I have never used for a dressing,
It made a deliciously creamy, simple dressing which is definitely thicker than I would usually use but perfect for drizzling over a peppery salad or slathering on brown bread with some just boiled eggs and finely sliced spring onions.
Our great grandmothers recipe doesn’t specify what type of vinegar and in this I used some gorgeous apple cider vinegar from Long Meadow Cider. The apple cider flavour came through beautifully and I think the base is so simple you could adapt with different flavoured vinegars. I also think that just before use you could chop through some fresh herbs to add different flavours depending on what you are serving with.

Salad dressing made from this recipe will keep for months
Take a tablespoon of flour, a tablespoon of sugar, a pinch of salt and mustard, a full cup of of milk, water and vinegar, 2 well beaten eggs and 2 oz of butter
- Mix dry ingredients and then add milk, vinegar and water and lastly eggs
- Melt the butter in a saucepan
- Pour in the mixture and bring to the boil stirring well
- The quantity will fill a 1lb jar
As it thickens when kept it should be thinned down with milk or cream
Note: This recipe is just tested in our house, will have to wait to see if when using from the jar in the fridge if we need to thin.

I’ll be honest—this dressing probably won’t last a month in our house. It’s already been the perfect addition to our salads, sandwiches, and even as a quick snack with some fresh bread. The jar will be emptied long before we have to worry about its shelf life!
